A large Brazilian brewery produces 5,000 tons of active dry yeast annually. The original steam direct heating drying method had the following problems: thermal efficiency was only 55%, temperature control accuracy was ±15°C, and activity loss rate was as high as 25%.
Technical transformation plan
1. Structural design
Three-stage gradient heat exchange module (stainless steel 316L material), special flow channel design of corrugated plate (flow rate 0.3-0.5m/s), online cleaning system (CIP cleaning cycle extended to 120h).
2. Precise temperature control
Heat exchange medium: 85℃ hot water (non-steam direct contact)
1) First stage heat exchange: 65±2℃ (yeast pre-dehydration)
2) Second stage heat exchange: 45±1℃ (active protection section)
3) Third stage heat exchange: 30±1℃ (cooling section)
3. Sanitary design
Surface roughness Ra≤0.8μm, fully welded structure (no dead corners), in line with FDA food grade certification.
